Welcome back to the Summer of Something New Blog Challenge, hosted by Miss ALK of Southern Belle in Training. From reading new books to trying new recipes, a group of bloggers is teaming up to be intentional this summer with trying new things and then blogging about them for six weeks on Fridays.
Today I bring you some clean-eating, sweet and yummy cookies from my kitchen! The best part is that they only have two main ingredients! This recipe is from The Burlap Bag, and I found it on Pinterest, of course.
Here’s how I made them, going off of Lauren’s recipe.
Then bake your cookies at 350 degrees for about 15 minutes. I kept checking every once in a while to see how they were baking. According to the recipe you can make about 16 cookies, but I made mine a little bigger, so I ended up with six.
What I love about this recipe, is its simplicity. You know what you’re eating and you can minimize the sugar! You can definitely taste the banana in them, but it makes the cookies really soft! It kind of felt like eating a granola bar the first time I tried them, but depending on what you add, it can taste differently.
I was really excited to bake something new so I can collect some recipes for when I cook for my friends and I in my apartment next year.
Speaking about new things this week, I also tried writing some postcards to my friends from college!
It was so fun to sit and write a cheerful note to some of my friends I haven’t seen in a while. And I still want to write some more of them!
