One thing I plan to do this summer is to learn how to cook a variety of things and try out different healthy recipes. My blog friends, Southern Belle in Training, Forever Convinced and The Shore Life According to M, began a blog challenge today called Summer of Something New Blog Challenge. Read more about it here!
So to continue with their theme of trying new things, I decided to cook something new today: guacamole!
I discovered guacamole a year and a half ago at a dinner with my sorority sisters and now I crave it sometimes! I love eating it with quesadillas, nachos, or just chips.
We bought avocados at the store this week, so I thought that now would be my chance to make a fun, summer snack. I kinda followed a recipe, but I more so made this guacamole my own. Here’s what I did:
1. Half avocados and remove seeds. Scoop out the avocado from the peel and place into mixing bowl.
2. Mash the avocado, keeping it a little chunky to your liking.
3. Add lemon juice, cilantro leaves, salsa, salt, pepper and tomatoes.
4. Mix together well.
5. Cover bowl with plastic wrap and chill until ready to serve! I plan to serve it with Garden of Eatin’ Blue Corn Chips.
